Ingredients:

Makes 4 bowls

Eskort Kassler Chops

1 pack

mixed cherry tomatoes

250 ml

wholewheat cous cous

250 ml

crumbled feta

30 - 60 ml

balsamic vinegar

avocados, halved

30 ml

dried oregano

 

olive oil for cooking

Method:

  1. Fry the chops in some olive oil and oregano, adding salt to taste.

  2. Cook the cous cous according to packet instructions and set aside.

  3. Chop the cherry tomatoes in half and toss together with the balsamic vinegar.

  4. Construct your bowl by adding cous cous, a pork chop, feta, cherry tomatoes and some extra balsamic vinegar and oregano for flavour.
