Ingredients:

Eskort Cheese Mini Viennas, cut into small cubes

large eggs

65 ml

full cream milk

pinch

salt

pinch

black pepper

5 ml

dried mixed herbs

½

red pepper, finely diced

50 g

baby spinach, finely shredded

100 g

cheddar cheese, grated

 

Spray n’ Cook

Method:

  • Pre-heat oven to 190°C and spray a muffin tin with spray n’ cook and set aside.

  • Whisk the eggs, milk and mixed herbs together in a bowl and season with salt and pepper.

  • Add the Eskort Cheese Mini Viennas, red pepper, spinach, and grated cheddar cheese to the egg mixture, mix well to combine all ingredients.

  • Fill muffin moulds about ¾ of the way full, place in oven and cook for 20-25 minutes until egg is set and there is a very slight wobble.

  • Remove from oven and allow to cool slightly before serving.
