Bacon Cheeseburger Meatballs

Mini, melty, moreish meatballs that taste like cheeseburgers. Are you drooling yet?

Makes: 12-16

Ingredients:

 

350 g

Eskort Mini Frikkadels

200 g

Eskort Rindless Streaky Bacon

10 ml

butter

200 g

cheddar cheese, thinly sliced into squares

 

baby tomatoes

 

lettuce

 

olive oil

1 can

chopped tomatoes

½

onion

2.5 ml

chilli flakes

1 clove

garlic, crushed

12-16

short wooden skewers

Method:

  • Heat butter in a frying pan and fry bacon until done to your liking (we like it crispy!).

  • Remove bacon from pan and cut into 3 cm pieces and set aside.

  • In the same pan with the bacon drippings, fry off frikkadels until heated and cooked through.

  • Remove from pan and set aside. To the same pan now with bacon and frikkadel drippings, add the garlic and onion and fry until softened, add the chopped tomatoes and chilli flakes and simmer until sauce has thickened.

  • Remove pan from heat and set aside.

  • Starting with the frikkadels, thread a frikkadel onto a wooden skewer, followed by a square of cheddar cheese, a piece of bacon, some lettuce and a whole baby tomato.

  • Repeat the process until ingredients are finished.

  • Pour the sauce into a dipping bowl and serve the bacon cheeseburger meatballs with the tomato sauce.
