Tuna & Bacon Burgers

Bye-bye beef patties and hello beach body! We’re keeping it light and fresh with a side of sassy with these spicy tuna patty burgers served with mouthwatering Eskort #JustDelicious bacon.

Serves: 4



200 g

Eskort Streaky Bacon

4 cans

shredded tuna, drained


spring onions, finely sliced

small handful

coriander, chopped

5 ml

chilli flakes


lemon zest

20 g





ground black pepper






oil for frying

60 ml


15 ml

harissa paste


red onion, sliced




tomato, sliced


hamburger buns


butter for buns


  • In a bowl, mix together tuna, spring onions, coriander, chilli flakes, lemon zest, salt and pepper.

  • Add egg and mix thoroughly.

  • Take the mixture and using your hands (or use a cookie cutter large enough and press mixture down to form 4 patties, set aside.

  • In a frying pan, heat the oil and when hot, add tuna patties.

  • Fry for 6 - 8 minutes on each side until cooked. Remove from pan and set aside, keep warm.

  • In another frying pan, fry bacon until crispy, remove from heat.

  • In a small bowl combine mayonnaise and harissa paste and mix well.

  • Assemble burgers by layering each bun with lettuce, a slice of tomato, red onion, tuna patty, a good dollop of harissa mayonnaise and top with slices of bacon.
