Serves: 4

Ingredients:

 

250 g

Eskort Mini Picnic Ham, cut into cubes

1 head

cauliflower, broken into florets

1

onion, finely chopped

60 ml

olive oil

5 ml

paprika

 

salt

 

ground black pepper

4

eggs

 

butter

 

fresh parsley, to garnish

Method:

  • In a bowl, toss cauliflower florets with salt, pepper and paprika to coat.

  • In a large frying pan, heat olive oil and add onion, cook for 5 minutes until just starting to soften, add cauliflower and cook until starting to brown and just tender. Set aside.

  • In a separate pan, heat a little more olive oil and fry ham until browned. Set aside.

  • Fry eggs to your liking in a little bit of butter.

  • To serve, toss together the cauliflower mix with fried ham and plate, top with your fried egg, sprinkle with parsley and serve.
