700 g

Eskort Pork Fillet

200 g

Eskort Streaky Bacon


small fennel bulb, sliced

4 cloves

garlic, crushed

4 sprigs

fresh rosemary, finely chopped

5 ml

chilli flakes

5 ml

fennel seeds, ground


salt, to season


ground black pepper, to season

30 ml

olive oil


whole head garlic, cut in half

2 sprigs

Fresh rosemary (extra)


extra olive oil for drizzling


  • Preheat oven to 200°C.

  • Add fennel bulb, crushed garlic, rosemary, chilli flakes, fennel seeds, salt, pepper and olive oil to a bowl and mix well to combine.

  • Rub the garlic mixture all over the pork fillet to coat well.

  • Wrap pork fillet with slices of bacon all along the length of the fillet, with edges of bacon tucked underneath fillet.

  • Break up rosemary sprigs and scatter on a baking tray, place fillet, bacon edges side down on top of rosemary on baking tray.

  • Add both halves of the garlic head, next to bacon wrapped fillet and drizzle everything with olive oil.

  • Place in oven and roast for 35 minutes or until bacon is crispy.

  • Transfer to a cutting board and let rest at least 10 minutes before slicing.

  • Serve with a salad or sides of your choice.
