large egg, beaten

800 g-900 g

bread flour

instant yeast

chives, chopped

onions, finely chopped

garlic, crushed

cheddar cheese


  • Preheat oven to 180°C.

  • Heat water, milk and butter in saucepan until butter is melted. Do not bring to a boil.

  • Pour mixture into a mixing bowl and allow to cool to lukewarm.

  • Add honey and 1 ½ cups of flour to the cooled milk mixture and whisk until smooth.

  • Add in the beaten egg and yeast and whisk until smooth.

  • Add salt and another cup of flour and mix until a dough starts forming.

  • Place dough onto a floured surface and slowly add remaining flour just until the dough no longer sticks to counter. Knead for 8 - 10 minutes.

  • Place dough into a lightly oiled bowl and cover with plastic wrap. Set aside in a warm place for 1 hour or until dough has doubled in size.

  • For filling, melt butter in a medium fry pan, add in garlic and sauté for a minute.

  • Add in chives and onions, fry until onions are tender.

  • Add in diced bacon and fry until bacon is cooked, remove from heat and set aside to cool.

  • After dough has risen turn out onto a floured surface.

  • Punch down into a small rectangle. Roll out dough into a 30cm x 60cm rectangle. 

  • Pour bacon filling onto dough. Spread with a rubber spatula, leaving some empty space around edges. 

  • Sprinkle half the cheese on top of filling.

  • Roll dough up tightly into a long roll.

  • Pinch seam closed with your fingers. Cut the roll into 12 pieces.

  • Place each piece into a very lightly greased 12 mould muffin tin.

  • Cover with plastic wrap, let rise until double in size (about 30 minutes). 

  • Top risen buns with remaining cheese.

  • Place buns into oven for 15 - 20 minutes and bake until golden and cheese has melted.

  • Remove from oven and allow to cool for 5 minutes before removing from tins.

  • Serve bacon buns warm.
