Turkish Frikkadel Kebabs

Packed with flavour, Eskort’s Mini Pork Frikkadels are perfect for party platters. YOU and DRUM's food assistant Carmen Petersen shows you how to give these frikkadels a Turkish flavour and serve them in a wrap.

Serves 6–8 people

Ingredients:

 

Sauce

 

 

oil

5 ml

cumin seeds

1 ca

chopped tomatoes

65 g

tomato paste;

20

pitted green olives

15 ml

dried oreganum

Frikkadels

 

650 g

Eskort Mini Frikkadels

200 ml

cake flour mixed with 5ml cumin & 30 ml sesame seeds

 

wooden skewers

To Serve

creamy yoghurt

lemons cut into wedges

Method:

Sauce

  • Heat a splash of oil in a saucepan and fry the cumin seeds till fragrant.

  • Add the tomatoes and tomato paste and olives and heat for about 5 minutes.

  • Season with salt and pepper and remove from heat.

Frikkadels

  • Roll the frikkadels in the cake flour mix and fry in a little oil till brown.

  • Remove from the pan.

  • Thread 3 frikkadels on each skewer.

To serve

  • Heat the tortillas in a pan or in the microwave till just warm and flexible.

  • Serve the frikkadel kebabs with the sauce and warm tortillas with yoghurt and lemon wedges.
