Sticky Kassler Chops & Cucumber Salad

Top of the chops! Sticky chops & a cucumber salad - fresh & sweet and oh-so-moreish.

Eskort Kassler Chops, bone in

10 ml

sesame oil

30 ml

soy sauce

60 ml

hoisin sauce


small red chilli, finely chopped


cucumbers, shaved into ribbons


butter lettuce, shredded


spring onions, finely sliced


fresh mint

30 ml

sesame oil

10 ml

apple cider vinegar




ground black pepper


  • Preheat oven to 200°C.

  • Place Kassler chops in a shallow casserole dish.

  • In a small bowl, whisk together the sesame oil, soy sauce, hoisin sauce and red chilli.

  • Pour sauce over the Kassler chops and toss to coat chops all over, leave to marinade for 15 minutes.

  • Place chops on a baking tray and drizzle with the marinade.

  • Place chops in oven and bake, turning and basting occasionally for 20 minutes or until caramelised and cooked through.

  • In a salad bowl, mix together the cucumber ribbons, lettuce, spring onions and mint.

  • Whisk together the sesame oil and lemon juice and drizzle over the salad, season with salt and pepper and toss to mix well.

  • Refrigerate until ready to serve.

  • Serve Kassler chops warm with the cucumber salad.
