Tomato Soup & Grilled Cheese Dog

A classic pairing is our #JustDelicious tomato soup and grilled cheese dog! A combination made in heaven!

Serves: 4

Ingredients:

 

Soup

 

1 kg

baby tomatoes, halved

1

onion, sliced

5 sprigs

fresh thyme or 10 ml dried

5 cloves

garlic, quartered

5 ml

chilli flakes

1 L

vegetable stock

 

olive oil

 

salt

 

ground black pepper

 

cream, to garnish (optional)

Grilled Cheese Dog

oil for frying

4

continental rolls (or hotdog rolls)

 

butter for rolls

100 g

cheddar cheese, grated

60 g

Parmesan cheese, grated

2

spring onions, sliced

Method:

  • Preheat oven to 200ºC.

  • Layer tomatoes, onion, thyme and garlic in a roasting pan or casserole dish.

  • Drizzle generously with olive oil and sprinkle over the chilli flakes, salt and pepper.

  • Roast for 40 - 45 minutes and remove from oven once done.

  • In a pot, warm through the vegetable stock, add the roasted tomatoes and bring to the boil.

  • Turn down heat and simmer for 15 - 20 minutes.

  • Allow to cool and then transfer to a blender, blend until smooth.

  • Pour blended soup through a sieve (to catch all those unblended tomato skin pieces) and return to pot to keep warm.

  • Season to taste and serve warm garnished with cream (optional) and with the grilled Cheese Dog.

Grilled Cheese Dogs

  • Heat oil in a frying pan and fry cheese Russians until golden and cooked through, remove from heat and set aside.

  • Place buttered rolls on a baking tray and assemble with a cheese Russian each, then sprinkle with both cheeses.

  • Place baking tray in oven and cook until cheese has melted and is bubbling and golden.

  • Remove from oven and serve warm with the tomato soup, garnished with spring onion.
