Sausage Bolognaise & Hidden Veggies

Everyone loves a #JustDelicious bolognaise and this simple yet flavourful dish helps with sneaking in those dreaded veggies that the little one’s don’t want to eat.

Serves: 4



500 g

Eskort Gold Medal Pork Sausages

30 ml

olive oil


onion, finely diced


carrots, peeled and diced

2 cloves

garlic, finely chopped

10 ml

Italian herbs

1 can

chopped tomatoes

250 ml

chicken stock

250 g

baby spinach




ground black pepper

500 g


100 g

Parmesan cheese, grated

small handful

fresh parsley, chopped


  • Remove sausage meat from casing and place in a bowl.

  • Heat olive oil in a large pan over medium heat.

  • Add onion, carrots, and garlic to pan and cook until softened, about 5 minutes.

  • Add sausage meat, Italian herbs and season with salt and pepper.

  • Cook until starting to brown, breaking down sausage meat as you fry.

  • Once cooked through, add chopped tomatoes and chicken stock and allow to simmer for 20 - 25 minutes, uncovered, until sauce has reduced and slightly thickened.

  • Cook spaghetti according to package instructions.

  • Once bolognaise has cooked, add baby spinach and stir through, once spinach has wilted your meal is ready to serve.

  • Divide spaghetti between bowls or plates and top with bolognaise.

  • Sprinkle with parmesan and parsley to garnish.
