Pepper & Parmesan Pork Fillet

#JustDelicious Pork Fillet is pan-fried, sliced and rubbed with a mixture of Parmesan cheese, lemon zest and black pepper then dressed with a sweet pomegranate and green fig curd and served alongside fresh, crunchy tenderstem vegetables.

Ingredients:

 

Fillet

 

1 kg

Eskort Fresh Pork Fillet

 

olive oil

 

salt

125 ml

Parmesan cheese, grated

15 ml

black pepper

1

lemon, zest

Curd

 

60 ml

butter

15 ml

lemon juice

5 ml

vanilla essence

2.5 ml

salt

180 ml

castor sugar

3

egg yolks

30 ml

green fig, chopped

80 ml

pomegranate seeds

Veggies

 

500 g

tender stem vegetables

15 ml

olive oil

 

salt and pepper to taste

Method:

  • In a frying pan over high heat, drizzle olive oil over the pork fillet and salt to taste.

  • In a small mixing bowl, mix together Parmesan cheese, black pepper and lemon zest.

  • Fry the pork fillet in a pan over high heat until medium to well done.

  • Rub the pork fillet with the Parmesan mixture and set aside.

Curd

  • In a large mixing bowl add butter, lemon juice, vanilla essence, salt and castor sugar and mix together.

  • Slowly add the egg yolks and beat for a minute.

  • Add the pomegranate seeds and chopped figs.

  • In a double boiler add water and allow to simmer.

  • Pour mixture into the double boiler and cook over low heat while stirring constantly. Take care not to let it boil.

  • After 15 - 20 minutes the mixture will have a smooth texture and will start to thicken. It is ready when the curd sticks to the back of the spoon,

  • Remove the curd from the heat and pour into a sterilised jar/bottle.

  • Cool immediately by placing the jar of curd in a bowl of ice water.

Sides

  • In a mixing bowl dress the vegetables with olive oil salt and pepper.

Serve

  • Thinly slice the crusted pork fillet, dress with the pomegranate and green fig curd and serve with raw tender stem veggies.
