Salsa Verde

 

125 ml

Italian parsley

125 ml

basil

65 ml

mint

65 ml

chives

65 ml

spring onion

65 ml

coriander

3 cloves

garlic

250 ml

olive oil

lemon, zest and juice

 

salt and pepper

Method:

  • Cook pasta shells according to pack instructions.

  • Preheat oven to 180ºC, drizzle the pork strips with olive oil, season with salt and pepper and bake for 10 minutes until cooked.

Salsa verde

  • Add all the ingredients to a food processor and pulse to desired consistency.

Serve

  • Dress the cooked pasta with the salsa verde, add pork strips and top with a handful of baby spinach.
