Russians, Pap, Tomatoes & Baby Cabbage

#JustDelicious Smoked Russians, pan-fried and served with light and fluffy pap topped with lemon and olive oil-marinated oven-grilled tomatoes and baby cabbage. Garnish with fresh chillies and spring onions.

750 g

maize meal

1 L

hot water

5 ml

coarse salt

15 ml

whole black pepper corns


  • Heat water in a medium sized pot over high heat, add salt and black pepper.

  • Bring the water to a boil and slowly add the maize meal while stirring with a whisk.

  • Close with a lid and lower the temperature.

  • Cook for 10 -15 minutes.



Oven grilled tomatoes and baby cabbage


500 g

large ripe jam tomatoes

1 small head

cabbage, cut into eighths

60 ml

olive oil


zest and juice

15 ml

coarse salt

15 ml

freshly ground black pepper


  • Preheat the oven to 200°C.

  • Line an oven tray with baking paper.

  • Cut a cross on top of each tomato, place them and the cabbage on the baking tray.

  • Drizzle with olive oil, lemon zest and lemon juice.

  • Season with salt and pepper.

  • Bake in the oven for 20 minutes.

sunflower oil


green chillies, chopped

1 bunch

spring onions

Method and serving:

  • Place a medium sized saucepan over a high heat, add the oil and fry the Russians for 2 minutes per side.

  • Serve the pap with Russians and top with tomatoes and cabbage.

  • Garnish with fresh chilies and spring onions.
