Roasted Red Pepper & Pear Soup with Kassler Chops

Eskort Boneless Kassler Chops


red onion, sliced

5 ml (1 t)

rosemary, chopped

2 cloves

garlic, chopped

125 ml (½ C)

leeks, chopped


red peppers


pears, peeled and chopped

1 handful

baby spinach

250 ml (1 C)


250 ml (1 C)

vegetable stock


lemon, zest and juice

45 ml (3 T)

olive oil

15 ml (1 T)

butter, melted

7,5 ml (½ T)


7,5 ml (½ T)



Roasted Red Peppers

  • Place the peppers over a high heat on a gas hob or on a baking sheet under the oven grill, turning the peppers until all sides are charred.

  • Place in a plastic bag and allow to sweat.

  • Remove the charred skin then slice open and deseed the peppers.

Roasted Red Pepper and Pear Soup

  • Place a large pot over a moderate heat and add the olive oil.

  • Add the onion, rosemary, garlic and leeks to the pot and fry until the vegetables are glossy.

  • Add the pears, milk and vegetable stock, and allow to cook for 5 minutes.

  • Add the roasted peppers to the soup and cook for a further five minutes.

  • Pour the soup into a food processor and blend until smooth.

Kassler Chops

  • Place a pan over a moderate heat.

  • Coat the kassler chops with melted butter and fry the chops until golden on both sides.

  • Thinly slice the chops.


  • Ladle the soup into a serving bowl then add slices of the kassler chops and fresh baby spinach.

  • Season with salt and pepper, drizzle with lemon juice and garnish with lemon zest.


  • This soup is great with warm, crusty bread generously spread with salted butter.

  • Roast a batch of peppers in advance for later use. Add to sterilised glass jars, top with olive oil and seal to use as needed.


  • This recipe contains dairy (lactose).


  • Milk (dairy, contains lactose): Use coconut milk.

  • Butter (dairy, contains lactose): Use ghee (clarified butter) or solidified coconut oil.
