Pear & Cumin Breakfast Toast with Eggs & Cheese Grillers

Ingredients:

 

Eggs and Cheese Grillers

 

500 g

Eskort Cheese Grillers

4 eggs

15 ml (1 T)

olive oil for cooking

Pear & Cumin Breakfast Toast

Bread;

 

500 ml (2 C)

bread flour

10 ml (2 t)

baking powder

5 ml (1 t)

salt

15 ml (1 T)

ground cumin

15 ml (1 T)

cumin seeds

250 ml (1 C)

plain yogurt

250 ml (1 C)

dried pears, chopped

250 ml (1 C)

boiling water

Topping

 

65 ml (¼ C)

goat’s milk cheese

65 ml (¼ C)

mozzarella cheese

5 ml (1 t)

black pepper

2.5 ml (½ t)

salt

2.5 ml (½ t)

pepper

65 ml (¼ C)

mixed micro herbs

Method:

Bread

  • Preheat the oven to 200°C.

  • Add the chopped pears to the boiling water for two minutes until softened.

  • Drain and set aside.

  • Combine the flour, baking powder, salt and ground cumin in a large mixing bowl.

  • Beat the eggs and yogurt, then add the softened pears.

  • Mix the dry and wet ingredients together until a smooth batter forms.

  • Pour the batter into a greased bread pan and top with the cumin seeds.

  • Bake for 15 minutes, then remove from the oven and set aside to cool down before slicing.

  • Do not switch oven off.

Topping

  • Combine the goat’s milk cheese, black pepper and mozzarella in a small mixing bowl.

  • Spread 15ml (1 tbsp) over the pear and cumin bread slices, and return to the oven to bake until the cheese is melted.

Eggs and Cheese Grillers

  • In a frying pan over a high heat, add olive oil and fry the cheese grillers until golden.

  • Fry the eggs in the same pan until cooked to your desired level.

Serving

  • Plate the cheesy toast then top with fried eggs and cheese grillers.

  • Garnish with micro-herbs.

Tips

  • If you don’t like fried eggs, serve with either poached or scrambled eggs.

  • Bread flour (contains gluten): Use gluten-free bread flour.

  • Plain yoghurt (contains dairy): Use lactose-free plain yoghurt.

  • Goat’s Milk Cheese (contains dairy): Use dairy-free cheese spread or vegan cheese.

  • Mozzarella Cheese (contains dairy): Use dairy-free cheddar flavoured cheese, vegan mozzarella or any non-dairy cheese alternative.
