500 g

Eskort Smoked Russians, thinly sliced

500 ml (2 C)

risotto rice

250 ml (1 C)

leeks, chopped

250 ml (1 C)

mushrooms, sliced

250 ml (1 C)

cherry tomatoes

60 ml (¼ C)

olive oil

60 ml (¼ C)


1.5 L (6 C)

vegetable stock

15 ml (1 T)

salt and pepper

2 handfuls

fresh spinach

Fried Eggs

Breakfast Risotto with Smoked Russians

  • Add olive oil and butter to large frying pan set over a high heat.

  • Fry the leeks, mushrooms and cherry tomatoes for five minutes

  • Add the Russian slices and fry until golden.

  • Stir in the risotto rice and fry for two minutes.

  • Pour in a cup of the stock, stirring until the risotto rice absorbs it completely.

  • Repeat the process with each cup of stock.

  • Once all the stock is absorbed, season the risotto with salt and pepper.

Fried Eggs

  • In a separate pan, over a medium heat, add the butter and allow to melt.

  • Add the eggs and fry to your preference.


  • Serve each portion of risotto topped with a fried egg and handful of fresh spinach on the side.


  • You can also serve your eggs poached or scrambled, depending on your preference.


  • This recipe contains dairy (lactose), soya and wheat (gluten).


  • Butter (contains lactose): Use ghee (clarified butter) or coconut oil.

  • Smoked Russians (contains soya and gluten): Use slices of smoked pork neck steaks.
