Ingredients:

 

Pulled Pork Spice

 

500 g

Eskort Smoked Pulled Pork

45 ml (3 T)

olive oil

5 ml (1 t)

smoked paprika

5 ml (1 t)

ground cumin

5 ml (1 t)

ground dry ginger

1

lemon, zest

45 ml (3 T)

thyme, chopped

Crispy Fried Potatoes

large potatoes, unpeeled, halved and boiled

15 ml (3 T)

salt

 

oil, for deep frying

Method:

Smoked Pulled Pork Spice

  • Fry the pulled pork in oil for 10 minutes over moderate heat until crispy and cooked dry.

  • Stir in the thyme and spices, then remove the pan from the heat.

Crispy Fried Potatoes

  • Place a pot of oil over high heat.

  • While the oil heats, use a tea towel to dry the boiled potatoes before placing in hot oil.

  • Deep fry the boiled potato halves until golden brown and crispy.

Serving

  • Season the hot potatoes seasoned with salt and pulled pork spice.
