A delicious Crème Brûlée with a quick and easy fail safe topping.

Candied Bacon


200 g

Eskort Rindless Streaky Bacon

60 ml (¼ C):

light brown sugar

Crème Brulée


250 ml (1 C)


250 g


5 ml (1 t)

vanilla essence

125 ml (¼ C)

castor sugar

10 ml (2 t)

gelatine powder

15 ml (1 T)

cold water




Candied Bacon

  • Preheat oven to 180°C.

  • Place bacon on a baking tray lined with baking paper.

  • Sprinkle sugar over the bacon and bake for 15 minutes.

Crème Brûlée

  • In a small bowl, mix cold water and gelatine.

  • In a small pot over low heat, heat cream and castor sugar until cream starts to steam.

  • Stir until sugar is dissolved, add gelatine and stir through.

  • Remove from heat and add vanilla and salt. In a mixing bowl, combine the cream and Mascarpone with a wooden spoon or spatula. do not whisk.

  • Pour into ramekins and refrigerate for an hour to set.

For the topping

  • Add half a cup of castor sugar to a non-stick pan and place over high heat.

  • As soon as the sugar starts to melt, swirl the pan over the heat until the sugar is amber and melted.

  • Pour melted sugar over the cold set Crème Brûlée and place back into the fridge for 5 min.


  • Serve with the candied bacon that can be used as a spoon.
