Fresh mint and creamy tzatziki lift the sweet-tart tomato flavour of this meatball sarmie.

Mediterranean Meatballs


350 g

Eskort Mini Frikkadels

5 ml (1 t)


5 ml (1 t)

rosemary, chopped

5 ml (1 t)


5 ml (1 t)

lemon zest

45 ml (3 T)

olive oil

125 ml (½ C)

sundried tomatoes


panini breads


salt and pepper to taste


olive oil for toasting and frying



125 ml (½ C)

cucumber, diced

250 ml (1 C)

plain double-thick yoghurt

1 pinch

black pepper

60 ml (¼: C)

mint leaves


Mediterranean Meatballs

  • In a frying pan over moderate heat, fry frikkadels in olive oil until golden.

  • Place cumin, rosemary, lemon zest and sundried tomatoes in a food processor or blender.

  • Add 3 tablespoons of olive oil and blend until a smooth paste forms. A

  • dd the paste to the frikkadels, stir through and remove from heat.

  • Season with salt and pepper.

  • Lightly brush paninis with olive oil and toast until golden.


  • Combine all the ingredients in a bowl.


  • Serve the meatballs on toasted panini bread.

  • Add tzatziki and garnish with fresh mint leaves.
